A soft, surface-ripened cheese made from pasteurised cow's milk, with a bloomy rind and coated with vegetable ash.
Its paste matures slowly from the outside inwards to become perfectly creamy. The use of ash (one of the first times in cow's milk cheese making) erases the bitterness and allows the flavours of butter and heated milk to develop over the days.
