Ewe's milk aroma with a soft, sweet flavour and a hazelnut finish. Melting paste with a subtle fruity flavour. Unique, delicately carved rind, characteristic of the wicker moulds of yesteryear.
Produced by the Istara cheese factory in Larceveau, in the heart of the Basque Country, France.
A Basque shepherd's son had the idea of making his sheep's cheese tommes in a small wicker basket. The result of this experiment was a cheese with a singular appearance, with a rind surprisingly sculpted by the weaving of his basket.
