Pear-shaped, spun cheese with a very thin, dry and smooth rind.
The cheese is cream to yellowish in colour and brownish on the outside. Its taste is very mild when young and becomes more pronounced as it ages. Smoked Caciocavallo has a wood-smoke aroma and flavour.
