Oveja Con Trufa (Sheep with Truffle) is made in the famous region of La Mancha, known for its Manchego, in Spain.
Local pasteurized sheep's milk gives the cheese its atypical flavor and pure white paste.
Aged for at least 4 months, it has a compact and melting texture in the mouth. Its paste reveals veins of black summer truffles (Tuber Aestivum Vitt). This type of truffle is of very high quality and gives the cheese subtle aromas of wild mushrooms.
