Farm cheese from Isle aux Grues, made from non-pasteurised cow's milk. Smooth semi-firm cheese with a pale yellow to straw yellow colour depending on the season.
Melting texture with a taste of butter and hazelnut. Nice smell of fresh, slightly acidic milk and undergrowth as it ages.
Legend has it that two inhabitants of the Isle who knew all the horses on the island saw a large, unknown black horse crossing the island in terror and disappearing into the cold waters of the St Lawrence River.
