Carignan-Salières is the name of a French regiment that arrived in New France in 1665. This cheese was created in 2016 for the 350th anniversary of Saint-Jean-sur-le-Richelieu.
Can be eaten as such, keep ambient 30 minutes before serving. Can also be served as a raclette, fondue or au gratin.
