Unpasteurized cow's milk cheese with a bloomy rind, triple cream.

Beautiful whitish and fluffy rind. Soft ivory cheese with a smooth texture. A soft and creamy intensity in the mouth, sometimes becoming runny. Soft texture and exquisite butter taste. Flavors of butter, fresh mushroom with a vegetable, and salty touch.

History

Recognized worldwide and considered one of the greatest Canadian painters of the 20th century, Jean-Paul Riopelle made Isle-aux-Grues his place of residence and creation from the early nineties until his death in 2002. The cheese Le Riopelle de l'Isle benefits the entire community of Isle via the Riopelle-Vachon Foundation to which a portion of the sales of Le Riopelle de l'Isle is donated.

The foundation's mandate is to contribute to the protection of ecosystems and biological diversity in the natural environment, to financially support educational projects for the general public on the environment of Isle-aux-Grues, and to award scholarships to Isle students in their post-secondary studies.
