Cheese made from unpasteurised cow's milk. Smooth semi-firm cheese, pale yellow to straw yellow in colour, depending on the season.
Melting texture, buttery and nutty taste. Nice smell of fresh, slightly acidic milk and undergrowth as it ages.
According to legend, two inhabitants of the Isle who knew all the horses on the island, saw a large unknown black horse cross the island in terror and then disappear into the cold waters of the St Lawrence River.
