Artisanal production of the Fromagerie de l'Isle aux Grues, cheese made from non-thermised cow's milk exclusively from the Isle.
Under a half-bloomed white rind slightly wrinkled with pinkish and reddish veins more pronounced with age, it presents a smooth paste, light yellow to straw yellow according to the season, very melting in the mouth. Taste of butter, hazelnuts with a hint of garlic and cabbage, more pungent with aging. Made in collaboration with the artist Pierre Seguin.
